Otani:"The one of the restaurants where you should visit in Kansai area is Uosada at Osaka. It is the fish
restaurant and it ripens tilefish for 2 or 3 days. I haven't liked tilefish so much but I change my mind by its
dish. Surprisingly some fishes are ripened for around 2 weeks. It has great flavor. More surprisingly it offers
crab bought 3 days before. The taste was deep and heavy. It is unique way to cook fishes."
